Serves: 4
Ingredients:
- 1 head cauliflower, cored and cut into florets about 1 inch in diameter, cooked in saltwater for few minutes
- 1/2 cup extra-virgin olive oil, plus more as needed
- 1/3 cup walnuts, lightly toasted
- 2 garlic cloves
- 1/4 tsp salt
- 1/4 tsp sweet smoked paprika
- 1 Tbsp. lemon juice
- pinch of freshly ground pepper
- 1/2 cup fresh macro greens
Directions:
In the food processor put together the walnuts, olive oil, garlic, lemon juice and seasonings. Process until a relatively smooth dressing forms, about 15 seconds. Taste and adjust the seasonings. Set aside.
Transfer the cooked and cool cauliflower on a plate. Spoon the dressing over the cauliflower, and sprinkle with a macro greens. Grind pepper over the top and serve, passing the remaining walnut dressing at the table.

I am with The Ancient Olive on this one. Turning something that looks like a stiff white brain into something that gorgeous takes major talent ma'am :). Your images are both impressive and gorgeous and this recipe is wonderful. Cauliflowers are cheap as chips here at the moment and I have 6 of them sitting waiting for me to turn their greens into hearty soup and work out something to do with the brainy bit. I think I just found what to do with at least one of them and some of my frozen hulled fresh walnuts from our tree that we recently collected :)
Cauliflower is one of my fav vegetable! Cant wait to try this recipe :)
