Here, chicken thighs and drumsticks are slowly cooked in a flavorful garlic sauce with a white wine, thyme and spices to create a comforting meal. To make a one-dish meal before putting the chicken in a oven add some mushrooms, potatoes or butternut squash. Delicious!!
Serves: 4-6
Ingredients:
- 2 Tbsp. olive or grape seed oil
- 6-8 chicken thighs and drumsticks, skin on
- salt and freshly-ground black pepper
- 20 cloves of garlic (2 full heads), separated, peeled (I asked my daughter to peel garlic for me)
- 1 cup dry white wine
- 1 cup chicken broth or water
- 1/2 tsp. smoked paprika
- fresh thyme leaves
Directions:
Preheat the oven to 375°F with rack in centre of oven.
Season the chicken with salt and pepper. In a Dutch oven or Cast-Iron Deep Sauté Pan over medium-high heat, heat the oil. Add the chicken skin side down and cook, turning ones, until golden, about 6 minutes on each side.
Transfer the chicken to a plate. Reduce the heat to medium, add the garlic, and cook, stirring regularly, until it is starting to brown, about 3 minutes. Add the white wine, chicken broth or water to the pan and boil for a few minutes. Bring back the chicken pieces to the pan, add thyme and paprika. Cover and place it to the oven, for about 20-25 minutes.
Transfer the chicken to individual plates, top with the sauce and serve immediately with your favorite vegetables.
