Carrots and green apples, both of them crunchy and sweet, are a winning combination in this tangy salad. Serve this salad as an accompaniment to a smoked turkey sandwich or grilled chicken, shrimp or fish. Look for interesting varieties of carrots in different colors, and use a Thin Julienne Slicer to slice them perfect thin strips.
Vitamin Carrot & Green Apple Salad with Lime Vinaigrette
Serves: 2
Ingredients:
- 1 large green apple, thinly sliced
- 3 carrots, peeled, shredded or thin julienne
- fresh herbs (parsley, cilantro)
- 3 Tbsp. fresh lime juice
- 2 Tbsp. extra virgin olive oil
- 1 tsp minced garlic
- 1/2 tsp ground coriander
- 1/2 tsp paprika
- 1/2 tsp kosher salt
Directions:
In a small bowl add the lime juice, olive oil, coriander, paprika, garlic and salt and whisk until blended. Set the lime vinaigrette aside.
In an other bowl mix together carrots, apple and fresh herbs. Pour the vinaigrette over and toss gently to mix.
Divide the salad evenly among small plates or bowls. Serve it with a smile-))
