Turnip

One and a half pounds of turnips serve about 4 people. Scrub, peal and cut them in large pieces or dice. Tiny young turnips may be scraped or pared and cooked whole. If you like you can add plenty of butter for reacher flavor and some cream instead of milk.

Ingredients:

  • 1 1/2 lb. turnips (about 3 large turnips), peeled, cut into chunks
  • 2 garlic cloves, chopped
  • 2 cups milk
  • 2 Tbsp. chopped fresh parsley
  • salt and freshly ground pepper to taste
  • white truffle oil for serving

Directions:

Combine the turnips, milk, and garlic in a medium saucepan. Set over medium heat and partially cover the pan. Bring to a gentle simmer and cook for 15-20 minutes, until the turnips are tender.

Drain the turnips, reserving the cooking liquid, and transfer to a food processor. Add parsley, season with salt and pepper and puree until smooth. Add some of the reserved cooking liquid, if necessary. Sprinkle with white truffle oil. Serve hot.
