With September being Childhood Cancer Awareness month, I would like to share with you some information about one program I participate in. “Cookies for Kid’s Cancer” was an idea of two parents inspired by their two years old son battle with the disease. Their employer (OXO) has pledged to donate 25c from every sale of specially labeled items during this fall towards pediatric cancer research and cure.
These Cut Out Peanut Butter Chocolate Cookies are very delicious and easily made using your favorite cookie cutters by OXO. Anyone can organize bake sale in their community, school or church. Makes: about 3 dozen cookies
Ingredients:
- 1 cup (16 Tbsp.)(2 sticks) unsalted butter, at cool room temperature
- 1 cup brown sugar
- 1/2 cup peanut butter
- 2 oz. bittersweet or semisweet chocolate, melted and cooled
- 2 Tbsp. cocoa powder
- 1 egg
- 3 cups all-purpose flour
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
Directions:
Preheat the oven to 400°F. Line two baking sheets with parchment paper.
Sift the flour, baking powder and salt into a bowl. In a large bowl, using an electric mixer, beat together the butter and sugar on medium speed until well blended, about 2-3 minutes. Reduce the speed to low, add the egg and vanilla extract and beat until the egg is completely incorporated. Then add the peanut butter, cooled melted chocolate and cocoa powder. Mix very well. Slowly add the flour mixture and beat just until incorporated.
Turn the dough out onto a wax paper, cover the dough with second wax paper. Using a rolling pin, roll out cookie dough in between wax paper sheets 1/4 inch thick and cut the cookies with your favorite cookie cutters.
Very carefully, using icing spatula, transfer the cookies to the prepared baking sheets, and bake 7-8 minutes until edges are firm. Allow cookies to cool on baking sheets before move them to a plate.
