This salad idea is for you if you are keen gardener with a vegetable plot or if your flower beds are a riot of color in spring. The ingredients could be something your might have grown as part of your favorite pastime. Any harvest can be served at the table to the amusement of your friends invited to a truly garden-grown lunch.
I love the Spring in a full bloom. Everywhere you turn around our house, there is a blooming tree or a garden full of color.
Ingredients:
- arugula
- tomatoes red and yellow
- blackberries
- radish
- freshly picked sweet violets
- extra vermin olive oil
- salt and freshly ground pepper
- lemon juice
Directions:
Trim and rinse the arugula. Distribute between individual plates and add violet flowers, thinly sliced vegetables and berries.
Make a dressing by mixing together olive oil, lemon juice. Pour the dressing over the salad, sprinkle with salt and black pepper, serve immediately.
