Roasted Cauliflower Bites are so simple to make, yet your quests will always be impressed by them. They have a wonderful flavor and can be given quite a "kick" too by including the cayenne. The spicy bites are great snack at any time of the day, so don't just make them for parties.
Note: Cauliflower is available most of the year and is one of the most popular vegetables on the market. It comes by the head, ranging from tiny ones weighing well under a pound to huge ones weighing 4 or 5 pounds. A 2-to 3-pound head is ample for four people. Buy only the white compact heads. Avoid those which are spotty or bruised and those in which the flowerets are badly spread out.
Serves 2 (because it's so good)
Ingredients:
- 1 head medium cauliflower
- 4 Tbsp. olive oil
- 3 garlic cloves, minced
- lenin juice from 1/2 lemon
- 1 tsp lemon zest
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1 tsp turmeric
- 1/4 tsp cayenne pepper (optional)
- salt and fresh black pepper to taste
- chopped parsly to serve
Directions:
Preheat the oven to 400F.
Wash the cauliflower and break into flowerets, place them in a large mixing bowl. Drizzle with the olive oil, lemon juice and sprinkle it with all spices. Stir the cauliflower to evenly distribute the spices. Place the cauliflower to a baking tray. Roast in the oven for 35-40 minutes or until it begins to turn brown, stirring from time to time.
Serve it hot, or at room temperature. These spicy cauliflower bites are so good and very addictive. Extra satisfying side dish!

Hi, I have made these twice already! Very delicious. The second time I added grated fresh turmeric, which gave it something extra. Do you have any suggestions re leftovers? They don't seem to be as good the next day.... (maybe pan fry them?). Thanks for this super idea for a healthy snack!

We never have leftovers-)) But if you do, try fry pan with a teaspoon of butter or olive oil, or eat them at room temperature-) Or put them on a tray in an oven 350F for 10 minutes. I hope it helps-)
