When I hear about mix of ricotta cheese with lemon, I start drooling-)) This cake has everything and more: it is flour-less with almond meal, so you don't have to feel guilty after a few slices. It is very moist and not too sweet. It is also lemony and has crunchy top. You can not ask for anything else, it is a perfection itself! I love to have slice of this cake for breakfast with cup of fresh brewed coffee. Bake it the night before so in the morning you have a great treat to start your day.

Russian Monday: Borscht with Chicken & Egg
Anyone who ever lived in Russia or Ukraine knows what Borscht is. It is very famous and favorite soup of many. There is a good number of different Borsht recipes in the world and I also have a few on my blog: Vegetarian Borscht, Chilled Borscht, Beet Soup with Sweet Potato, Borscht with Turkey Meatballs - just take your pick. Every time I cook this soup, I make it differently. This time I made Borsht with chicken broth and soft boil egg. I served it with a lot of fresh herbs and toasts. I cooked it yesterday for lunch, and my whole family were fed from one pot. Have a delicious Monday!

Hearty and robust or delicate and cake-like, all muffins have a place on the morning table. Homemade jams and preserves go well with full-flavored muffins, while the more subtle ones need only sweet butter, a little crème fraîche, or perhaps a spoonful of jelly. Tuna & Potato Fishcakes
These fishcakes are delicious, no matter how many you are going to make they will disappear in front of your eyes. Usually I have a few photographs for a recipe, but today I have only two photos for you, you know why? I have started eating the cakes from my photo shoot-)) They are great for a party, your friends are going to love it. You can make the tuna cakes few hours before the meal, but before serving put them in the oven preheated to 375F for about 10-15 minutes. The fishcakes will be hot and crispy, and ready to be eaten-)) Serve them with tartar sauce or Country Rémoulade sauce.

I loved this cake when I was a child. It is not too sweet and has perfect amount of chocolate. It was very difficult to buy in store, people used to queue up in line for a long time to get that cake. That's why we baked it at home very often by ourselves.

Cauliflower Cake is a very fresh idea for serving your vegetables for dinner. This dish looks impressive on a plate and goes well with any seafood combination or roasted chicken. These tasty pastries are especially dear to me because they carry the taste of my childhood. When I was a schoolgirl during summer holidays my parents used to send me to spend some time with grandma in the countryside. My grandma used to live in the village, in house made of real logs with giant brick-made oven. She had large garden, veggie patch, chickens, sheep and even cows. These were unforgettable days of my childhood.
