
You probably know these cookies or have seen them all over Pinterest, in fact I have few different recipes of them in my folders. They have attracted my attention quite some time ago and I’ve been thinking of one day making an effort to bake my masterpiece. Now I am glad I did. So, the holidays may be over, but this seriously impressive dessert is giving me a reason to bake and celebrate winter. I was very surprised by the ease of the process and deliciousness of the end result. My daughter has helped me a great deal and we had a lot of fun baking. These “peach” cookies are beautiful, and Cooking Melangery is all about beautiful food. Lets start new year with creatively delicious treat!

Russian Monday: Roasted Lemony Duck with Buttery Quince - “Utka & Aiva”

Many people, when they think of duck, think only of roast duck. In reality there are so many interesting ways to prepare duck that, with the real connoisseurs, roast duck often takes a a back seat. For instance, steamed or boiled duck may be attractively combined with vegetables in Chinese-style recipes. Or duck may be braised and served with any one of a number of delicious sauces. But, personally I always come back to roasting the duck, with different herbs, spices, fruits and grains. Here is a recipe I created for upcoming holidays - roasted duck, with ginger and sweet honey, stuffed with lemons. I served it with fried pan buttery quince and few fermented and pickled vegetables. Shad was known as elft, the eleven fish, to the early Dutch settlers. It was on the 11th day of March each year that the first shad were caught and cooked on a plank, a method the settlers learned from the Indians. Shad were so abundant in colonial days that it became quite fashionable among some of the well-to-do. Many of them ate shad on the sly, fearing others would think them unable to afford more expensive food.

When I was a child we were allowed to go by ourselves to the local food store for simple shopping such as getting bread or milk. Very often in my early age I had basic grocery shopping as a chore. Our nearby bakery was nothing special. They stocked few varieties of breads, some breakfast pastries as well as few cakes were always available, but that was all. But sometimes, if you were lucky to come to the store at the right time, you could find number of sweet treats behind glass display. One of such treats was rum baba, soaked in sweet syrup, rum and covered with white sugar icing.

When I was a schoolgirl during summer holidays my parents used to send me to spend some time with grandma in the countryside. My grandma used to live in the village, in house made of real logs with giant brick-made oven. She had large garden, veggie patch, chickens, sheep and even cows. These were unforgettable days of my childhood.

Russian Monday: Chicken Liver Pâté With Red Wine & Cranberry Jelly

History of pâté is rooted in the distant past and many countries contest the right to be named its birthplace, however, by default this right is held by France. In truth, French chefs have simply revived the dish loved by ancient Romans. Interestingly enough, in medieval times, pates were served as feast culmination, and hence were decorated in the most luxurious fashion, often made with “surprise” inside, when live birds could fly out from inside of the dish brought into the feast hall. Often pâtés were cooked wrapped in the layer of dough, like pies. Dough was simply a wrapper and secondary to the stuffing, hence word “pâté” has started being used only for what was inside of such pies.

It is moist, lemony, sweet and buttery with perfect crunchiness of poppy seeds. You can bake it in a loaf pan, or muffin cups or even mini muffin cups. The result will be the same - fantastic!
